Persimmon and Blackberry Salad

Persimmons are on sale at Trader Joe’s or should I say “were on sale until I got there.”  I never had persimmons in my whole life until this past fall while visiting my in-laws in Israel.  I seriously thought they were tomatoes.  They’re so sweet they taste like candy.  Amazing.  This salad is sweet and will pair well with my Ricotta  Latkes.

1 bunch of dinosaur kale (grrr!!!)

3 oz. blackberries

3 oz. spring onions

2 persimmons

juice of half a lemon

2 tbs. maple syrup

1tbs. olive oil

Directions:  Wash fruits and veggies.  Peel and dice the persimmons.  Rough chop the kale.  Chop the spring onions.  Toss with the blackberries.  Whisk olive oil, lemon juice, and maple syrup together in a separate bowl and pour over. Toss and enjoy!
